工作介绍
1.主讲《食品营养学》、《现代食品加工新技术》、《水产品加工工艺学》、《食品无损检测技术》和《食品免疫学》等本科生课程;指导学生获得全国大学生生命科学竞赛河南省赛区三等奖1项。
2.主要从事食品营养与健康研究,聚焦于加工诱导的膳食蛋白质氧化对机体健康的影响及其相应防御措施研究;以及对加工肉制品品质劣变的调控。近年来,主持有国家自然科学基金青年项目1项,参与并完成省级项目2项,厅级项目1项;发表高水平论文16篇;为Food Research International,Journal of Agricultural and Food Chemistry等杂志审稿人。
